Ceviche Summer is a pop-up that serves classic Puerto Vallarta-style ceviche. Around New York City ceviche seems to be a bit of a hidden treasure and when found, costs too much for what you get.   Our philosophy is the same you will find on the warm beaches of Mexico. Keep it fresh, keep it local, and keep it affordable.   We serve restaurants, bars, festivals, and special events
